Star Anise Spiced Butternut Squash Soup
Fall, with its colder days and nights, is the perfect time to turn toward bowls of warm comforting soups. This star anise spiced butternut squash soup is a creamy, vegan, gluten-free and dairy-free treat that will keep you satisfied for longer than you expect. You can easily substitute some pumpkin or sweet potato for the butternut squash. Serve topped with plenty of seeds or with a warm crusty loaf for dipping.

1 tablespoon coconut oil
1 large red onion, peeled and finely diced
1 teaspoon minced garlic
4 star anise
1 large butternut squash, peeled, deseed and cubed
2 carrots, roughly chopped
4 cups hot vegetable stock
Pinch of chilli flakes
Ground black pepper
Heat the oil in a pot over medium heat and sauté the onions for about 10 mins until softened.
Stir in the garlic, star anise and butternut squash and cook for 1 min until fragrant.
Add the hot stock, season to taste, mix well, cover and simmer for about 30 mins until the butternut squash is cooked through.
Allow the butternut squash soup to cool down and remove the star anise before blending it to your desired smoothness.
Serve the soup warm.
