Chez Panisse is a famous eatery in Berkeley, California that was once named the “Best Restaurant in America” by Gourmet Magazine. It’s most akin to a friendly neighborhood bistro, and its moniker is an homage to Honoré Panisse, a character in the classic French movie trilogy Marius, Fanny, and César. Founder and executive chef, Alice Waters, first opened Chez Panisse in 1971 with the idea that the most delicious food is made with the freshest ingredients. According to her philosophy, food should be “good, clean and fair,” and she works with farmers and ranchers within the community to help make this a reality. She has even worked with local schools to teach kids how to cultivate a sustainable garden and how to use produce to make delicious dishes. But her commitment to using sustainable and local ingredients is most evident at Chez Panisse. The restaurant utilizes a set menu that changes daily to ensure that each dish is as fresh and impeccably prepared as can be. Every meal includes four courses, and examples of past offerings include wild king salmon carpaccio, morel mushroom pasta al forno, strawberry pasticcini and apricot galette. Chez Patisse is open every Monday-Saturday, and the price per person is $75 on Monday, $100 on Tuesday-Thursday and $125 on Friday-Saturday.
