    Brussels Sprout Salad with Fried Salami

    Serves 4

    Ingredients:
    2 ounces thinly sliced salami (or other similar meat like prosciutto or even bacon)
    3 tablespoons of olive oil
    1.5 lbs of brussels sprouts, trimmed and thinly sliced (you can use a food processor do this by hand: after trimming outward leaves, cut brussels in half and thinly slice)
    Juice from 1/2 small lemon
    Salt and pepper

    Preparation: Stack a few slices of salami on top of each other and slice them very thin.

    Head oil in a skillet over medium-high heat. When heated, add the slices of salami to pan and let fry until golden brown and crunchy. When done, take out with slotted spoon and set aside on a small plate lined with paper towel for the oil.

    Add the brussels sprouts to the same pan and sauté. Stir occasionally until they are soft and tender, about 4 – 6 minutes. Season with salt and pepper and a squeeze of lemon juice and mix.

    Combine brussels sprouts with fried salami and mix gently. Top off with remaining lemon juice.

    P.S. You could also add a sprinkle of Parmesan cheese at the end. You could also add in a pinch of red pepper flake to the pan while the brussels are cooking.
